Ajouter du sel, poivre, et 25 g de truffe en lamelles. R\u00e9server le tout dans un r\u00e9cipient herm\u00e9tique.<br \/>\nAu moment du repas, pr\u00e9parer un bain-marie. Au dessus d&rsquo;un casserole d&rsquo;eau fr\u00e9missante, faire fondre le beurre (de pr\u00e9f\u00e9rence dans une casserole en cuivre), puis verser imm\u00e9diatement m\u00e9lange \u0153ufs-truffes, remuer doucement avec une cuill\u00e8re en bois ou un fouet jusqu\u2019\u00e0 \u00e9paississement l\u00e9ger. Ajouter la cr\u00e8me fra\u00eeche et remuer vigoureusement hors du feu. Ajouter 25g de truffe r\u00e2p\u00e9e et m\u00e9langer. Ajouter 1 pinc\u00e9e de sel.<\/p>\n<p>Servir dans de petites assiettes \u00e0 soupe pr\u00e9chauff\u00e9es.
